Bierschinken, mortadella, mettwurst, and more

No smoking for me today, weather supposed to get rainy so im working on some dry cure.
YA I was just watching the news this morning and seen that band of storms coming thru your area,,, hunker down 

Can't wait to see Crankys experiment here 
 
Glad to hear your neighbors and all will be alright. Helps keep things in perspective sometimes. Pistachios.....definitely have not had this sausage before. I got a lot of experimenting to do!!!!
 
Phone update while I sip on a cold one.

Mortadella old school.

Lots of spices in this one

All mixed up after adding pistachios, peppercorns, and fat cubes.

Bagged up in muslin. I see fat and pistachios!



Break's over. Next up is mettwurst.

That's my favorite way to make mortadella, in muslin!

Need to buy some more so I can stuff some up!

Lots of spices in this one too. I ran out of my little cups and had to break out the Jell-O shot cups!

Pork, beef, and fat ground. Spices mixed into some beer my German neighbor recommended, and then all mixed and mashed up.

Now all sacked up in muslin. Gonna smoke tomorrow.


Fried up what was left in the bottom of the stuffer and in the tube, this stuff is quite tasty and should be great with some smoke!




Bierschinken isn't gonna happen. The cubed meats need to cure for at least 48 hours and last night's fiasco stalled that.

However, I shall now make drunken snack sticks with the left over beef and butt! The pork loin I bought for the bierschinken will be turned into chops for curing and mini hams for breakfast!

Now, where's my Yeti cup, I need some Crown!
 
CB, Looking  good and you have taken care of  the neighbors which are priority. I'm looking forward to seeing the finished results.Watch that crown as my friends and I have realized that after too many crowns  we  turn into clowns!

Crown Royal it is! Cmon down, 73 degrees right now and the farm fresh eggs were delivered this morning!

My problem with Crown is I tend to get REALLY creative in the kitchen while sipping! The absolute best sausage I ever made from scratch was done while under the influence. Everyone loved it and my wife still talks about it! Problem is, I didn't write a damn thing down.... :th_crybaby2:

So tonight, it's almost fool proof, I'm using premixed snack stick seasoning that I already measured out for 5# batches. So as long as I get the grinding done, I'm good! :biggrin:
 
Ok. I was gonna stuff my bologna in a casing, now I am thinking of useing a bag.

Did you wet the bag or use it dry.

Rinsed it really well, squeezed it out, and onto the stuffing horn. FYI, you can blow out a muslin bag. I wanted to see how tight I could stuff it, now I know! :biggrin:

LOLOL that's awesome. I have done that myself.... Glad to hear your latest creation is going well. I am partial to Gibsons myself, but it is very hard to find down there. Needless to say I'm watching.....
