I'm going to try some things that are different for me this weekend. Bierschinken, mortadella, and mettwurst are 3 sausages I like to eat, but have never attempted to make.

Also going to try a breasola in a Umai bag. Should be a fun and interesting weekend for sure!

What ever meats are left over will be blended into snack sticks of some sort.


Back fat and other assorted frozen pork and beef aren't in the pic...

Gonna post pics as I go along...

LOL, so no grind, right? Just cut it and mix it in. I think cutting pork butt into 1" cubes is a pain, I wouldn't have the patience for this.....NOPE!

Looking forward to how it all comes out. Bierschinken is on my to-do list, just haven't had the time. How large a casing are you going to use?

You guys sure know your sausages. I just haven't tried a lot of different ones. Might have to make some small batches of different ones for experimentation purposes just to learn what they taste like.
 
Major delay occurred last. All went back in the Refrigerator.

That has me quite cranky! I do want one of those though!

That's the bad part, I didn't even get to crack one open!

Neighbor across the street (82) had a medical emergency. We had to stay with his wife who is severely disabled and then I had to go get their son from the airport.

Neighbor has a broken hip but will be ok.

But, back at it now.

dang it - that's what neighbors do,, great job on your part,,,, I expect to see one cracked open later today LOL I have some things going as well

No smoking for me today, weather supposed to get rainy so im working on some dry cure.
