I bought one of these right after Christmas and seasoned it this past Saturday. After it was seasoned I went ahead and played around with the smoker a bit. I turned the knobs all the way down and the lowest I could get it was 350 degrees. I realize that there was no water in the pan and that will affect it some. I've googled and some people say that the thermometer is garbage and to get a new one. What else can be done to get the temp around the 225/250 mark? Would changing the amount of propane going in affect the temp? Thanks for the advice.

Welcome to SMF.  How did you measure the temp?  Did you use the door thermometer?   If so did you first do a stove top boiling water test to see how accurate it read?  If not, do it.  Remove it from the door and get a pot of boiling water going.  Insert the thermometer and it should read 212*.  Then you can see how far off it is reading.

I would consider investing in a wireless thermometer in the near future.  One of my favorites is the Maverick ET-732. Check it out.

Does this smoker have two burners?

You should do a research on a "needle valve" modification which basically reduces the amount of gas going into the smoker's valve which brings the temp down.

I assume you are left handed?   No wonder you're having issues.........that being said from another lefty

I had to put an "in line" needle valve on my propane tank to get lower temps...High temps are not an uncommon problem and installing an in line needle valve a popular solution.
