While I am personally not much of a fan of hummus, I have a few family members who are. A few months ago I had a thought of smoking some chick peas and see if I could make some smoked hummus. Well, the tasters approved overwhelmingly. I used food processor and added some green onion and garlic and of course olive oil. I know we're about Qvue as proof...but it just looks like mushy junk...(like I said...I'm not much of a fan)

What I don't like about the homemade hummus is the skins not getting pulverized. there is always some "texture" left. Store bought hummus feels different. How do you guys handle that?
 
I used to fight with the skins but gave up from it being too much work. Now I just deal with it and eat them. I used to shock the beans in cold water after boiling and then rub/Roll them between the palms of my hands. The skin would fall off and then you fish them out of the water. It's a pain if you do a lot.
 
I use precooked canned beans. Blitz the heck out of them in a food processor until smooth. If you want a finer paste try passing the paste through a seive. Tahini is optional, but fresh lemon juice, garlic and cayenne is a must for me.
I have never tried with dry beans. Do you guys have a preference in that area?
