Just finished up making some chicken soup and it got me thinking.
Pretty well every time i run my smoker a make sure i squeeze a whole chicken in there with whatever im smoking.

I like how much use i get from one chicken.
Example smoked a chicken lastnight and here is what i got from this one bird.

Chicken Meat itself.
Boiled bones down for chicken soup.
Chicken salad for sandwiches.
Some chicken went on the cast iron skillet pizzas i made with the kids tonight.
That isnt even including the pieces i ate while breaking it all down.

That's alot of lunches and meals for the first few days of the week.

My question is how many other uses do you guys have for chicken?
 
Yep nothing goes to waste when we make poultry.

One thing most haven't done is to make schmaltz. Remove all the skin sometime and do a naked bird cook.

Render down the skin to make schmaltz and gribeness. Use the schmaltz for the fat in baking. Makes great pie crust for chicken pot pie, and adds an interesting twist to chocolate chip cookies. The gribeness is a good salad topper, or chef snack not to be shared.

I'm a die hard red meat eater but the wife says I'm not getting any younger and need to eat more chicken. Somehow I will use this info to my advantage lol

I've more recipes than I can cook cooking everyday, twice a day, for a month.

My name is Chile and I'm a diehard fan of Yardbird cooked almost any way you can on the grill/smoker.
Of course I'm no meat snob, I like it all... If I can kill it, I'll grill it!

Sorry didn't mean to sound like a meat snob there. Anything on the smoker is good in my book.....wife and kids love some chicken......but any excuse to put some smoke in the air I'm in!!!
 
Reading all these articles on cooking with smoker is very helpful ,doin some parts tonite.
 
I will be doing the hillbilly brine, but i want to inject also. Is butter and chicken broth good enough?
