Just wanted to say a huge thanks to you all for the help and advice. My first attempt smoking anything (ribs) was not that great so asked on this forum and have been researching.

Just smoked my 2nd attempt with some babyback ribs and so happy with the result. So much jucier and a lot more tender. So much better than the 1st attempt. My faith has been restored and I am looking forward to smoking a lot more soon.

I used Memphis dry rub on one and the other has my homemade sauce - BBQ, honey and smoked ghost pepper powder. I was pretty impressed even though the smoker ran a little hotter than expected... Especially when one of the wood chunks caught on fire!

The ribs look lovely Dan - I am glad the second attempt was more successful. Ribs are quite forgiving when it comes to temperature variations and so the heat blip probably would not have been too much of a problem. The rib meat looks beautifully tender - Well done

Glad you stuck with it. We have all had our share of "mistakes", but it is the great results that keeps bringing us back................

Smoking can be an adventure. Happy to see you didn't let one bad go keep you from trying again. Might I suggest keeping some notes of each time you smoke. Include the basics like meat and seasonings, but also weather and type of fuel. My memory is not what it once was and I fond this beneficial.
Look forward to seeing pics from your next smoke!
