so i was wondering if any body has pre made a fattie , then vacuum sealed and froze it for smoking later?

I haven't pre-made and frozen, but I've pre-made, wrapped in Saran, and let sit a day or so before smoke.

My only concern with your idea is, what are the fillings? Fresh sausage or previously frozen sausage? Defrost procedure?

Some fillings may not fare well with freezing, veggies, cheese, etc...

Defrosted and then refrozen sausage sometimes gets very sad...

Defrosting in the frig after freezing could make for some excess moisture.
