Got 3 9# butts on sale for 99c#


Bone removed and cubed all ground up


Weighed in 5# batches,seasoning all mixed up ready for stuffing.


Did the Hungarians first


We did 4 different recipes


All packaged up! I went down to my brothers house and we got to work! It was nice,we both had the day off and got to do something together that we both enjoy! Recipes to come!
 
Hungarian Sausage

5 lbs ground Pork shoulder
3 Tablespoons of kosher salt
3 cloves of minced garlic
1 teaspoon of sugar
5 Tablespoons of Hungarian papri
ka
2 ounces cold water

Polish Sausage recipe

5 lbs ground Pork shoulder
3 Tablespoons Kosher salt
1 teaspoon sugar
3 cloves of minced garlic
1 teaspoon cracked black pepper
1
heaping teaspoon marjoram
2 ounces cold water

Sheboygan style Wisconsin Brats

5 lbs ground pork shoulder
3 Tablespoons of kosher salt
1 Tablespoon of sugar
1&1/2 teaspoons of ground nutmeg
1/2 teasp

oon ground coriander
1/4 teaspoon ground celery seed
2 teaspoons cracked black pepper
1/8 teaspoon marjoram
1&1/2 teaspoons ground ginger
2 ounces cold water

Very nice looking brats. I will be refuring back to this recipe in the near future. We usually drive Hoffs meats in Brownsville WI for 40 to 60 lbs of brats every other summer. 4 to a pack vacuum seal and freeze.

Thanks! The recipes are from my fathers friend and it was his dads recipe! The Sheboygan brats are my brothers recipe that he tweaked over the years and its the best brat I've had! And i live in Wisconsin! Lol
 
Very Nice them sure look good,,, and a great buy on the pork butts,,, wish they were on sale around here

Yep, I'm waiting on the $0.99 sale here.  I checked the store this week and it was back up to $2.69 a pound at the grocery and still $1.68 a pound at Sam's.  $0.99 is time to pack the fridge!!!!  Great looking stuff there.

Thanks guys! Yeah when I opened up the pig flyer and Smithfield butts 99c! Ended on the 3rd,thats the day I got em. Two left in the bin so ask the butcher any more left,he came out with a rack! Loaded the cart up and the butcher says must be making sausage, I said ooh yeah! Lol

Had a awesome time bro! They all are really good! The sheboygan's are going with us ice fishing,using the smokey Joe! Lol

Piggly Wiggly sometimes has some great meat prices. I live very near one and drive by a couple regularly, and if I'm paying attention, can often ger great deals. That said, at GFS in Appleton, I just bought 4 boneless butts for $1.29/lb.......no bones is kind of nice......cube it up, freeze and grind. Made some breakfast links and threw the rest of the ground meat in the freezer for later sausage making. Sounds like you had a great time with your brother, great job, Jay!
 
You got me excited can't wait till next weekend we have some chicken sausage, breakfast sausage, brats, venison summer & sticks on the agenda starting Friday with the summer & sticks smoking on Saturday. Good times maybe some beers & great products. Looks awesome.
