Just got the 30" MES for Christmas and did my first smoke Saturday- a brisket flat! It came out well and overall I was happy.

Today I embarked on my first pork smoke- tenderloin. I started with two small 1.5ish lb loins- rinsed, trimmed the silver skin and a few "chunks" of fat and patted them dry.

I rubbed them with:

(Minus the thyme and ginger)

Cherry was the wood of choice today...

Threw them in the preheated smoker @ 235. Brought them
up to an IT if 142, removed, foiled and let sit for 45 minutes.

I ended up with some of the tastiest pork tenderloin I've ever had!!



After these came off I threw two Cornish hens on which ended up being the juiciest birds I've ever cooked. I couldn't be happier with my smoker and all of the help from this forum!!
