Hello guys,

I just bought a Masterbuilt 30" electric smoker  a couple days ago, broke it in with some ribs yesterday for the new year, they turned out pretty fair. Been wanting to get into smoking for a while now, I do a lot of deer hunting and am starting to get tired of paying someone to process my deer. I would love to get into making my own deer sausage and pork sausage from the plentiful wild pigs we have running around. Glad to have found this site, I'm sure I'm not the only one on here trying to make deer sausage. Looking forward to the discussions!

Welcome to the forum!  There are some sausage makers here, but I'm not one of them  I do enjoy eating sausage though!

Welcome! The only difference in my opinion doing venison vs. other meats, is venison is much leaner, and you usually don't want to use the fat from venison, so you add some pork fat, or just add pork butt if you can't get just fat. Otherwise, the recipes are pretty much the same. Have fun!
