As today is New Years Eve and we are having a few friends over for a little get together 

I decided to do a small 14 # turkey.

Not wanting to fire up one of the big smokers for a small group. I grabbed my trusty 22" webber grill and set it up 

for indirect heat using the fuse method.


As you can see the coals form an arch around the back half of the webber. They are arranged 3 coals wide x 3 coals high. Then I 

placed a chunk of apple wood about every 4 inches around the arch. I lite 10 coals to start it off on one end and away we went.


Here we are about 1/2 way through. The pit is running at 305 -310 deg for some nice crispy skin. 

And here is the finished product.


I let it rest for about 1 hour and then we dove in. It was delicious as always. I think once you smoke a turkey you will never make one any other way.
