So I fired it up this morning to put my pork butt in and got it to 230 degrees. I put my amazen 5x8 tray in half full and my 6 lb pork butt. I checked my thermometer and it went to 319 degrees and then it even went to 393 degrees which I find impossible. So I put it in the kitchen oven and it's reading within 30 degrees of the oven. Then. A few minutes later I notice my smoker is smoking a lot. I go out there and almost all of my half tray of pellets have burnt up with about half of them left charred black. I really don't know what's going on. The whole time I never went over 240 on the smoker. Can anyone help me?

It sounds like the controller in your MES is bad.

I would adjust the temp until the Maverick reads 230.

The pellets burned up because the smoker got too hot.

Maybe I'm overreacting a little. This is only the aecpnd smoke ive done and im nervous. I'm in hour 4 and I still have some smoke and the internal temp is 150 per my old kitchen thermometer. That seems like a good temp for 4 hours in right?

Id boil test your therms to see what they read at your elevation.

Yes, 150° is a good Temp at 4 hours.

My thermometer read 319 and 393 while my smoker read 240. I think I just freaked out. Things look good 5 hours and 155-160. Thanks guys for helping a greenhorn. I'll let you know how things go!

Not knowing what "Your" Thermometer is, I can say a lot has to do with where you have the Thermometer, or the sensor of the Thermometer.

However like I said earlier your Internal temps are right in line with Normal.

I know it's an old post but anyway. Pellets will support flame. Especially if grease drips on them, ask me how I know
