Maiden voyage for my new Oklahoma Joe offset smoker. Popped her cherry with 20 pounds of butts smoked for 12 hours real low. Came out with a great bark, moist, and better flavor than I've personally had anywhere around Virginia. (Miss Louisiana BBQ) Glad I wrote down the Rub I came up with. This should feed the family well tomorrow! I'm obsessed.

8:34am put on the two butts. I.t. 37° chamber tempt 275°

4:10pm stalled at 149° a bit

4:52pm I.T. 154°. Smoker at 275° wrapped in foil and placed back in.

8:45pm I.T. 205° pulled and let rest on the counter 45 min still in foil.

I'm sure someone could critique the hell out of this but for ME, everything went perfect and I'm not changing. A thing.

Hope everyone had a merry Christmas

And another shot..

My only criticism is that yours looks better than my first butts.............

Great job....

Hope you wrote down what you did. Perfection doens't happen by accident...............

Again, great job.

Happy New Year.
