So I much prefer mixing my own spices for sausage at home using my recipes and some I found on here, however, I can easily make mistakes when measuring out items each time, and I also love the idea of measuring one premix, and then mixing everything up without being concerned I missed a measurement and put in tsp's instead of tblsp's. So I made a spreadsheet of my recipes that allows me to put in the weight of the meat, and the spreadsheet will spit out the volume and weight measurements of the spices. I also put in prices so I know how much it costs. If you buy your spices right, it is well under half the cost to make your own vs. premix. If you just buy spices at your local superstore, premix starts to look like a better value.

So I still wanted the ease of only one premix to measure, so I made one premix for breakfast sausage and one for brats. Using my calculator, I figured 100 lb. worth of meat, and mixed the spices appropriately. I then vacuum sealed them and labeled the bag with what is in it, and how much per lb. to use. So now I have the ease of premix, at the price of home mix. Plus I know exactly what is in it. Maybe I should get into the premix seasoning business.......the margins aren't too bad. Plus I know exactly what is in this.

Bratwurst seasoning, left plenty of room in the bag for resealing after opening each time as I might only make 20 lb. or so at a time.


Breakfast sausage seasoning.....I used 12 lb. worth, and realized it was a little light on salt after sealing up the bag, so I just wrote on the bag what to change next time I open it up.
