Prime Rib cooked.......

I usually host my families Christmas Eve meal. In the past I have usually done something smoked, ribs, chicken, butt, salmon, but this year I am going for prime rib. The problem is, my mom hates bloody meat. She will not eat it if it has any pink, let alone blood. So, the big question is, how do I get around that? Do I slice her piece at the start, and put it on after the bigger piece goes on? Or do I smoke the prime rib, let it rest, slice, then throw hers in a pan or on the grill to get it done? I know it will not be the best piece of meat but some people I guess just can't get over the fact of eating something medium rare.

Your second idea. Do the whole thing to what everybody else likes, Then slice it & Grill, Broil, or Pan hers to the Non-Pink State.

Good morning
I think it depends on how much smoke she likes? And trying to figure out the cook time on a single slice /steak so you don't end up with a hockey puck. I would be inclined to give her the second slice in from the end and finish it on a grill pan. Also,think about serving time you want her meal out at the same time as the rest. I normally do not share end cuts they are my favorite even if they are cooked past medium rare.

It is common for restaurants to cook rib roasts rare and heat portions to be served well done in hot Au Jus. This guarantees the meat will be juicy and a well seasoned au jus adds flavor to the meat...JJ
 
That you all for your replies! I do think I will go with smoking it all and cutting her piece to fire on the grill to the preferred doneness. Prime Rib is the one meat I have not cooked so I am excited.

You'll love it !!

Out of all the things I smoke, I find Prime Rib to be one of the Easiest, and by far the most Rewarding.
