Going to Costco and picking up a couple chuck roasts for Christmas dinner. I've cooked them on my offset before, but would like some suggestions for rubs. Last time was just spog. Any suggestions?
 
If you want to jack it just a bit, add some fresh ground Ancho chili to your SPOG blend. It's a different flavor than red chili powder and is relatively mild. Beef chuck has a nice flavor, so it doesn't need much coaxing to bring out it's best.

Great advice, the only suggestion I have would be chipotle seasoning, like the ancho, it has a nice earthy flavor that pairs well with a chucky.
