That really does look incredible! I would love to try this but beef is way too expensive right now in Charleston, SC. I asked Santa for a bunch of different meats for Christmas so hopefully he delivers? Probably should put a shower curtain or tarp under the tree to catch the blood and meat juices just in case Santa doesn't have a vacuum sealer? Anyways, outstanding job on the roast beef!
