So I picked up this new smoker today, and have a couple questions. I have been using a Komodo Joe, so I know these two will be way different in use.

1. I've read on earlier models where the chips burn up in about 45 min or so unless using a AMNS. Is this still the case on this model?

2. Heating it up to 275 for the 3 hours recommended to begin with, I placed 3 igrill probes on different racks to monitor the different levels. Noticed after 20 min the top and middle were reading around 290 and the bottom was reading around 280. I went out to the smoker and the readout on the smoker itself was 257. Anyone else encountered this with theirs?

Your very lucky to have the controller reading less than the actual pit temp.

You could have got stuck with one that is just the opposite.

Now you have the ability to set the smoker to 275 & in reality you may be smoking closer to 300.

MES controllers are notoriously inaccurate.

I would just get the AMNPS, then you don't have to mess with adding chips all the time.

Plus you get a good consistent smoke the whole time.

I bought a cast iron smoker box and am placing it directly on the element to see how that works. Prob gonna go ahead and order the AMNPS this weekend anyway though.

After running it for about 4 hours last night, noticed upon heating towards target temp, it would heat up about 15 degrees hotter initially, then cool down closer to target. The top probe was still about 5-8 degrees over and the bottom one around target. I don't think the 5-8 degrees will be bad in the long run though.

You are right though. Better to read under than over on the smoker readout. I've never trusted thermostats that were stock on products anyway.
