We're scheduled to have rain in NorCal for the next 3 days.  I normally don't smoke when it rains but family is coming this weekend and I'm wanting to do some of Bear's recipe for smoke salmon.

Question is how can the rain effect the end results?  My smoker will be under the awning of our trailer, so that isn't a concern, but with lower temps, the heating element will be running more frequently.  I will be using my amazen pellet tray, so that has me a little concerned.

Thanks,

Brian

Brian,

Fish like Salmon are very use to getting wet.  They were born that way, so I wouldn't worry about it.........LOL

But seriously, what smoker do you have?    Depending on the size of the heating element and how well insulated the smoker is will help determine how much extra work the smoker will be dealing with during this cold front.  Glad to hear you'll be under a cover while smoking.  I was suppose to be smoking more Salmon this weekend but think I'll wait until I see a dry spell in the near future for I don't have the luxury of using a covered patio.

Is the Amazen located in the smoker or in a mailbox mod?

it's a MB analog with mods(but no external cold smoker/mailbox) and I'll be using a pellet tray.  High is 59*/low 41*

I just checked the weather and looks to be a solid 24hrs rain.  I'm going to pass of the salmon and smoke a tri-tip

We're doing an early Christmas tomorrow.  Dinner will dungeoness crab(cooked in lightly salted water with onions, bell peppers, onions garlic, oregano, and cilantro), grilled swordfish, and tri-tip, garlic bread, au-gratin potatoes, salad.  Chocolate, chocolate chip, Kahlua cake.
