We love this one once in a while!
1. Simple black pepper, salt, brown sugar, white sugar, cayenne, chili powder rub (sorry no specific amounts, few dashes of each on each breast).
2. Cook 2-3 slices of bacon for each breast.
3.Slice an apple or 2 into about 1/8" slices.
4. Peel the chicken skin back, slice the breast evenly down the center but not all the way through.
5. Stuff 2-3 slices of bacon inside each breast and as much apple as you can.
6. Apply rub to the outside of the breast and then stick about 4-6 slices of apple around the outside and pull the skin back over to hold in place.
7. Wrap with butcher twine to hold everything together.
8. Smoke with fruit wood (or whatever your flavor is) to temp. and enjoy.
I have injected with apple juice in the past and it seems to come out too sweet for my liking so I skip that lately but this time I topped them with a maple bourbon glaze which was phenomenal!! (Whole seed Dijon mustard, lots of bourbon, brown sugar and real maple syrup)
