After surfing, reading, chatting, and taking notes I thought it was time to share the fruits of my labor with my fellow smokers. My family does a prime rib for Christmas every year and since I bought a smoker 2 months ago I feel the need to step up and smoke everything on earth, so tonight was a test run for Christmas prime. Got a 6 pound bone in choice prime from the local grocery store. It said seasoned but I couldn't see much more than 11 grains of pepper. I added salt, pepper, onion powder, and garlic powder before smoking. The meat had an IT of 56 when I threw it in my MES 30 at 220* for 3 hours. The IT when I pulled it was 128*, so I foiled and toweled it for the cooler. After resting 45 minutes waiting for the wife, kids, and sides to be ready the IT had crept to 136*. The flavor was amazing but I felt like it was a touch over for my liking. Next time I'll pull at 118-120 and rest to 125ish. For a first time prime I'm gonna toot my own horn as I'm being fairly critical of myself on the first run. Can't wait for Christmas, if they don't like this prime they aren't any family of mine!
