Thought I'd let Jeff's server cool down from yesterday's smoked turkey-fest.

I did see at one point there were 103 people viewing the poultry forum yesterday, might be a new record!

Here's my turkey smoke...

15lb. Freebie from work.

Brined over night, got the MES 30 up to 275F and at one point 300F with the Auber controller.

Went to 165F IT and it was amazing delicious and juicy. Smoked with mailbox mod AMZNPS and apple pellets.

Also made oyster stuffing, yams, bean casserole with onions, mashed potatoes and gravy.

Desserts were Costco pumpkin pie, apple pie and the neighbors wife's cream cheese pie.

Had the sheriff neighbor and his wife over for dinner and desert, nice he didn't have to work this holiday.

The boy was here on break from college too.
