Been lurking here off and on looking for various info, but figured it was time I might contribute on occasion as well. I've become a BBQ fanatic in the last year and a half, doing lots of brisket, pulled pork, ribs, etc.....getting into sausage as well. From Central Wisconsin. Hope to learn even more and take everything I make to the next level, as well as try some new things.

Hey Blade, welcome to the party. I know I'm a little late, but always good to see someone else tag there location as central WI. Seems more and more Badgers are getting into the addiction that I've suffered from for a few years now.

Doggone, Mark, we are practically neighbors! I live between Rapids and Nekoosa. I'm a born and bred Rapids boy. My addiction started just less than two years ago when I stayed up all night one night making pulled pork on my Weber.....I was so tired, but it was so good, that I was hooked. I've been studying, learning, testing, and tasting BBQ since then, and I've gotten a few things down pretty solid. Still have a lot more to conquer, though, and even what I do now I'm sure can be improved upon. In fact, this fall I bought a case of prime brisket from Costco.....took my brisket to a whole new level. Since that first all night pork butt session, I've bought a Big Joe Kamado and a Smoke Vault 24" smoker. There isn't much I won't try.....just finished some buckboard bacon, and pulled out some round roast from the freezer for beef jerky. Keep in touch neighbor!
