I posted this as a reply to another thread and was hoping to get a few more responses. The situation:

I purchased two frozen 7-8 pound turkey breasts last Thursday with the intent to smoke Thanksgiving morning. At the time I was not aware of the USDA guidelines. I checked the breasts Sunday evening and they were not completely thawed. Would you feel comfortable smoking them Thanksgiving as planned or would I be better off starting over?

They will be OK in the fridge for a couple of days thawed out.

If it were me I go ahead as planned.

Have at it, They will hold Sunday to Thursday easily. USDA guidelines pretty much assume worst case scenario where you are clueless about thawing and food safety, are storing in the front of the refer with kids opening the door 50 times a day just to see if Mom made more Kool-aid and your temp is set too high...JJ
