Hi.
I am a balcony BBQ user. I have just bought my first real smoker mainly to smoke bacon that I cure at home.
I have the curing process down pat, using Prague #1 powder purchased through Amazon.
Up until now I have used my propane BBQ with a smoke bow and water bath as a smoker but it is too hot, even with one burner only on low.
Anyone else a balcony smoker? Luckily our bylaws permit this, and I own my condo.
Hoping to pick up tips on smoking meats, fish, and any pesky pigeon that craps on my balcony!!

Looks like a very informative site. We have a lot of good fishing round here so expect to get some salmon smoked in due course.
Definitely looking at smoking some ribs too.
