Cherry Smoked Chipotle Burgers with Smokey Pimento Cheese

I have had a real hankering for pimento cheese lately and I had a 4oz block of extra sharp cheddar in my fridge. Got me thinking what if I mixed that 4oz of cheese with 4oz of smoked cheese to make some smokey pimento cheese. So for the pimento cheese:

1. Grate 4oz of each cheese
2. Mix the following with the cheese
2oz diced pimento, 2/3 cup light mayo, 1/4 teaspoon of cayenne, pinch of salt, pinch of onion powder, 1 teaspoon Worcestershire, and 1 teaspoon lemon juice.
3. Stick it in the fridge to chill out for a bit and meld the flavors



So now time for the burgers I just took 1lb 90/10 ground beef, and gently mixed into it 1.5 teaspoons of steak seasoning and 1.5 teaspoons of puréed chipotles in adobo


The jumbo Joe got the call tonight and he is sitting on top of his grandpa, the 26 haha. Used a combo of Stubbs and Fire King Lump with some cherry chips to fill a small Weber chimney and reverse seared them with some cherry chips thrown on the coals. Took about 30 minutes or so total.


Time to build my burger:


Cooked it a little more than I would have liked but overall I am really happy with it. Loved the smokey taste of the burgers from the combo of the wood smoke,chipotle, and the pimento cheese. I also really liked the contrast of the cold cheese on the warm burger and the crunchy pickles. Will definitely do this one again. Thanks so much for looking!
