Did this one awhile back and needed to do it again delicious. Made this in rings so I can cook it around the Vortex,cut it up for my Thanksgiving Lasagna.

Chicken Leg Quarters were 19 cents a pound by the 10 pound bag

I rinse my chicken 


De-boned bones will make some stock and meat for Pansit 


close to 5 pounds of meat for the sausage


Ground threw the fine plate once fridge over night


Made slurry this AM then went shopping after mixing 



Used my Jerky Cannon 


5 pounds of some of the best Italian Sausage

Oh! And please do post your Pancit! I haven't had that since I was in the Philippines! One of my faves! I make the Philippine version of chicken/pork adobo that I make a lot!

Adam Thanks I forgot the Garlic in this batch LOL it was not missed at all.Almost had to fight with SWMBO to get a taste LOL

 Ingredients for 5 LBS. Fresh                            
                                                  
  5 lbs. Chicken Thighs skin on Ground               
  1 1/2   Tbsp. salt                                 
  8 oz. ice water                                    
  1 1/2  Tbsp. Fennel seed cracked                   
  1 tsp.  coarse Black Pepper                        
  1/2 Tbsp. sugar                                    
  1 1/2 tsp. crushed red pepper (optional)           
  1/2 tsp. caraway seeds                             
  1 Tbsp. Basil                                      
  1 Tbsp. Oregano                                    
  1 Tbsp. Parsley
  1 or 2 garlic toes
  1 cup NFDM

Above ^ recipe I use for Fresh ^

For smoked 

 Ingredients for 5 LBS. Fresh or Smoked                            
                                                     
  5 lbs. Chicken Thighs skin on Ground

  1 Tbsp. Basil                                      
  1 Tbsp. Oregano

  1 or 2 garlic toes
  8 Tbs Soy Protien Concentrate 
  1 1/2 Tbs. Dextrose
  1 level tsp cure #1
