Hello all,

First off my name is David Moore and I am from Kenai, Alaska. I have been smoking fish for a very long time on a Little Chief / Big Chief. My wife talked me into, not real hard to talk me into because I have been saying for years that I wanted one, buying a Traeger Lil' tex elite. I love it I have had about 1 1/2 to 2 years, I have cured and smoked my own bacon, ribs, turkey, mac-n-cheese, pork and beans... and much more. I just recently stumbled on to a recipe for summer sausage and decided it may be time to get on a forum and see what other folks are doing in their smokers, and try to pick up any tips and tricks that there might be out there. Looking forward to conversing with others here.
