I stopped by my local auto shop to have my car serviced and showed the mechanic pictures of my new smoker.  Fast forward three months.  Now I am smoking food for him in exchange for wood.  Not a bad deal if I say so myself.
 
I would smoke for auto repaires if I was you. Wood is cheap compared to auto parts and shop time. That said trade is allmost allways better than paying out cash. And if it's something you enjoy doing like smoking even better

. Hey blamac always nice to connect with other cannucks on this site. The only thing I hunt any more is upland game birds for food. I have another house at a lake about 100km north of Saskatoon and we have problems there with wolves and coyotes as well as beavers and racoons. I know lots of members might have issues with controlling populations of these animals but I hunt them on a regular basis. Used to hunt big game but not anymore. Now my son and son-in-law are getting into it so I will do what it takes to help them out. How about you. Sounds like you like to hunt. Not sure where Gibbons is.
 
Gibbons is about 30 mins north of Edmonton. Yes I do like to hunt its a good way to get out with friends and family especially bird hunting. Thats one reason I bought a smoker is to smoke jerky from Deer and Goose. Did you say wolves??? Are they by Saskatoon or soon to be by Saskatoon now, wow they are taking over the country side. All I do is educate the coyotes around here. They are pretty Wiley haha. If you have any big game or bird smoking recipes that you would like to share I would love to try them.

I am also a second hand vegetarian I eat the animals that are vegetarians. I know bad humour. LOL
 
Yes wolves. It sounds crazy but our cabin is on the edge of the thick wood hills. It's only about an hour from Saskatoon but we regularly see moose black bears and wolves. Wolves have become a problem here and there is an open season to hunt them. Similar to deer season. Love jerky and sausage made from wild game (not goose though). Lots of good advice and recipes on here so your at the right place. What are you using to smoke with?
 
Sorry bout the delay on the reply. Getting ready at the range to day and talking to farmers about permission. I bought a dyna glo 1890 Charcoal vertical offset. I've only done the seasoning in it so far and I did it wrong from the instructions but I followed the instruction but bad instructions. I am trying to make jerky tonight and I am having trouble getting the temp up but when I seasoned the smoker I couldn't get the temp down. LOL. Tonight I tried less charcoal and the temp is down and maintaining a slow cook temp 180ish. Have you smoked deer jerky before? If so what temp and how long did you smoke for?
 
For jerky I generally follow squibs mthodhttp://www.smokingmeatforums.com/t/174131/sqwibs-jerky-recipes . I always use cure#1 instead of tq so I can control the salt easier and I usually smoke on my mes 30 for 3 to 4 hrs at 120* and then finish in the oven until it reaches the texture I'm after. My oven has a dehydrate setting which is 140* with the convection fan running. I'm not saying this is the right way to make jerky just that its the method I prefer for good jerky. Alot of members here start their jerky at 160* or higher for 2 hrs to reduce or eliminate the possibility of becoming Ill from bacteria.
