Pork Sammies!

The weather is beautiful here today! Its the kind of day you want to be on the golf course, tree stand, camping, or sitting in a football stadium! Its the Louisiana fall season, probably last 3 days.LOL Back to 90 Monday.

I broke a butt outta the freezer last weekend and let it thaw. Then I rubbed it and wrapped it and placed it in the reefer till yesterday. 

Yesterday, I unwrapped, re-rubbed, scored the fat,  trussed and this time lightly rubbed in some light brown sugar. While all this was going on, I fired up the smoker 275, vent closed.

Lets start sooner this time with some pictures. Remember I am out of practice its too hot for too long to be going outside!


I gotta tell you the home health care worker for Pop thought we were going to have pig ass. LOL I said I was smoking a butt. She said, well we eat triple, chitlins and tongue, you make sure its cleaned good don't ya. LOL

Into the smoker, some temperature checks, some manipulations for that perfect heat, approx. 230. A little warm for me, normally I do 220, but it was close enough without me starting to tear stuff up tweaking. LOL 

Time in to hot 275 smoker, 4 PM. 45 mins. later regulated to 230, vent cracked.

An hour later its probed, and at 95 degree IT, I add hickory and apple chips, give the vent 1/2 opening. and say good night


Saturday at noon, 197 degrees IT. Its so pretty outside.  I clean the bird bath, crush some corn for the bird feeder. Beautiful day!

About 2 PM temp hits 200.  Its a happy happy butt!


This <Clears throat> Bark seemed to get caught and fall off the butt, but its ok, its all the scored fat..... OMG!


I pulled it and used some of my JJ's enhanced finishing sauce. I don't go anywhere without it! Its totally amazing.

Its still awhile till supper...... should be something to do while Alabama and A&M play. I know!


BUNS! 


Its the first time in awhile to turn the oven on, so long all my yeast is outta date. First time ever I have our of date yeast!

Hmmmm  what else?

Momma's Cole Slaw would go good with sammies! I had a head a cabbage in the reefer and a carrot so what the heck.


I told ya its been a while. stove was hot but mostly I forgot to rotate the pans. My bad.


I remember a 6 month old jar of reefer pickles, garlic dills! Perfect! Thanks Al.

Like that Cinderella song, "Bibbidi-Bobbidi-Boo", put it together and what have ya got? Bibbidi-Bobbidi-Boo!! Or as we in the south say, supper!

I slather some homemade BBQ sauce all over the meat. And I put the stuff up before eating, I know me, its so I don't just start sliding those sammies down, they just disappear! Bite, bite, bite POOF gone.


I felt bad, all we had for supper before the game was old sandwiches.

SO ...... I made some spiced peach sweet tea to help wash the sammies down!! Amazing there is not more typos! ROFLMAO>

Sammies tomorrow, I can't wait!

Oh, we had the first snow flakes of the winter today. No golfing here.

I am always so envious of your homemade rolls. And all of your homemade food for that matter! When my wife gets tired of me some day, I am moving to Louisiana and buying the house next door to you haha

If you are gonna take 20+ hours slow smoking, the rolls only take 4 hours of rise time and maybe 15 mins. total hands on. Its just to easy. And they reheat great also.

Its hard to beat a good pulled pork sammie. Its been too long now, I am thinking maybe next butt should be chopped.

Bread is like smoking, ya screw around with it long enough then one day it all just comes together. You wonder why you ever worried about it.
