I used the 3-2-1 method. I rubbed the ribs over night with a basic rub. I put the ribs on when my WSM smoker reached 240 degrees. I put on five pieces of hickory and four pieces of cherry wood. I smoked them for the first 3 hours keeping my temp between 220 and 240. I took the ribs off and wrapped them in foil and put them back on the smoker for 2 hours. When I wrapped them I used butter, honey, brown sugar, and a sweet Thai chili sauce. I kept the temp the same, 220-240. After those 2 hours I unwrapped the ribs and I put them back on the smoker for 1 hour.
They turned out perfect, almost fall off the bone.
