Pork chops

Thick cut chops. Brined overnight in apple cider, brown sugar, salt, & spices.



Out of the brine ready to.head to the smoke, ape wood is the choice today.



Getting a nice amount of applewood smoke.

Thanks Al brought some in to work with a Jalapeño/Habanero pepper jelly. Good stuff.

That looks awesome,,,,, looking good,,,, BUT,,, you have my attention now,,, What is this "ape wood" you smoked with for wood of choice??? :cool:

Ape wood is my secret I cant tell you but it is similiar to apple wood.
