New to posting but have been reading for a while. Been smoking some butts mostly but going to do a butt and ribs this weekend for a family BBQ. Have an offset smoker. Was wondering if I could ask a few questions as I have already learned so much from the forum.

How long should I use wood to smoke the butt and or ribs until switching over to charcoal?

Temp for ribs? And method of choice on how to cook em.

Any other advice is greatly welcome and will post pics this Saturday when I start the smoke.
 
I run my offset on wood only, just use charcoal to start the fire & get a good coal bed.

There are as many ways to smoke ribs as there are people on here.

Probably the easiest is the 3-2-1, or 2-2-1 method. Running the smoker at 225.

3-2-1 for spares, 2-2-1 for BB's.

3 hours on grate, 2 hours in foil, 1 hour back on grate.

My way for ribs is by internal meat temp.

Check out PERFECT RIBS in my signature line, it may give you some ideas.
