Doing something a little different then my normal poblanos. I still used sweet Italian sausage/ sauteed onions ..sprinkled in a little turbanado sugar.
Normally I like to all the brown caramelized cheese on top but today I used one strip of center cut bacon. These usually go direct over the fire but since I wanted to crisp the bacon without over cooking the thin walled poblanos the 007 is in indirect mode. Cooking these lovelies around 350* in the floating dome.
