Skin on chicken quarter s chewy

Got grizzly grill hopper and put on masterbuilt smoker. Works great have a little bit of a problem with chicken skin being chewy. Have to cook for 30 people in 3 weeks. Need help

The only way chicken skin is going to be crispy is to finish cooking it on a hot grill or oven.

If your smoker will run at 300-325 you may get crispy skin or at least bite thru skin.

Al has got you covered. In my opinion the best way to cook chicken with smoke is at high heat (350-450) with some wood added to the coals or heat source. I know the MES doesn't get too hot so maybe cooking indirect on a kettle or even a gas grill with a smoking pouch might be your best bet.
