I don't know Richies method, but I don't touch the meat when using the Vortex. I rotate the lid 45 degrees every 15 minutes. Watch out cuz that lid handle gets HOT!
Late to the party but I have a question about leg quarters and the vortex. Did you flip the quarters or rotate them or can you simply leave them be until they are done?

I don't flip them I rotate 1/4 quarter turn evry 10 to 15 minutes
