I wanted to try Jeff's recipe from his newsletter this week.  I found a choice full packer at WalMart:


The price was right!


Trimmed the fat and rubbed it with molasses and Jeff's rub.  On the WSM at 240 until probe tender.  I will start checking at 190 IT.

Took it off at 200 IT.  Wrapped in foil and resting in a cooler with towels for 2 hrs.  It smoked for 16 hrs.


I messed up the bark with my gloves getting it off the smoker.

Do you open the foil to let it vent for 10 mins or so before putting in the cooler? Maybe your idea of probe tender is off. Everyone is different and what I think is probe tender may be different from you. 

I dunno, but perhaps pull the next one before it gets probe tender and below 200*. 
 
You just overcooked it. It happens.

Just take it off a little sooner the next time.

So the worst case scenario is you will have chopped brisket sammies, instead of sliced.

I bet it still tasted very good!

I didn't vent before wrapping.  I probed it at 190 and 195 and still felt too much resistance.  You may be right about my feelings of tenderness, it seems to be inaccurate.

Thanks Al!  It was very tasty and my GF prefers it falling apart.  My goal was pull apart slices, just for my own pride.  I'm not throwing it in the trash!

I'll take a couple of chopped up sammies some nachos,tacos,quesadilla's and maybe a little shepards pie even. Almost forgot a cheese steak sounds great too! Plenty of great uses for that brisky!

Suriously! It looks fantastic!! Honestly, I prefer brisket super tender so I'll usually get some crumblier slices. Often its in the tip of the flat so I just lop that of for tacos and get busy with the rest of it. I've also noticed that the knife I use makes a difference as well as my slicing stroke. So you might try experimenting with that a little if you haven't already. Looks like you're just going to have to smoke another one.... :grilling_smilie:

I'm sorry but you shouldn't have to suffer with this fall apart. Brisket. Send it to me and I will see to it is disposed of properly.

I would say you have two choices on the "falling apart when slicing" thing:

Either pull it at about 190°-195°.

Or do what I do---Use an electric knife, so you don't have to use any downward pressure when slicing.
