Hello,

Well I am a newbie to smoking and a smoker.  Although I grew up in a Portuguese family, this is going to be my first attempt at the traditional family recipe.  My concern is, I purchased and received my smoker and my concern is with the operating manual...

It states that "the thermostat control has a range from 50F to 200F.  The ideal temperature when smoking sausage is 165F... The Smokehouse temperature should never exceed 170F at any when smoking meats."

I have tried all day to talk with someone in the customer service department, but no one was ever available and the call was always transferred to the sales department which couldn't answer my question....

1.  Isn't this temperature too low and the risk of bacteria be to great?

2.  Is this in C and not F, which would be more logical.  Or is this meant to be a very slow cook to get to "done"

What are people's thoughts?

That's a great smoker...  You will enjoy using it.....

Do they provide recipes for smoking meats...  there is probably some preparation involved...    Whole muscle meats are considered sterile inside... Comminuted meats require nitrite..

There is a significant difference between Smoking and BBQ'ing meats.....

Marianski:

Cold Smoking

Cold smoking at 52-71° F (12-22° C), from 1-14 days

Warm Smoking

Continuous smoking at 73-104° F (23-40° C), from 4-48 hours depending on the diameter of the meat, humidity 80%, and medium smoke.

Hot Smoking

Hot smoking is the most common method of smoking. Continuous smoking at 105-140° F (41-60° C), 0.5-2 hours

Thank you for the reply and lesson.

I want to do so much more than just "smoking" so, I am going to return the unit I have purchased and looking to get a Rec Tec with cold smoker attachment or the Louisiana Grill 900 with a cold smoker attachment.  Either of these units will give me the options I would like which is smoking and cooking.

Might as well jump two feet into this :)
 
The smoker you have will cold smoke....  I believer the temp controller will control at 50 deg. F...    It's a very good unit.....   nepas has one and thinks it's the best smoker he has owned...    Contact him before you "jump" so to speak....
