Reverse Sear Using my Louisiana Grills Broiling Plate

My pellet grill has a plate you can slide back that exposes the fire box allowing for very hot sears. I hadn't used it for reverse sear until this smoke and I really don't know why. Oh well, here is what I did.

I took the rack out from the half of the pellet smoker that is over the broiler plate. I preheated the pellet smoker to 200 F.


I put a nice top sirloin rubbed with steak spice on the top rack and smoked it to an internal temperature of 120 F. Keep in mind that She Who Must Be Obeyed won't take anything rarer than medium.


I slid back the broiler plate cover and put the rack back in place with a fireproof glove.



I turned the pellet smoker to a high temperature and left the lid open while a large flame developed under the broiler plate. I put the steak on and gave it about 30 seconds, rotated for a cross hatch and then seared the other side.


The internal temperature was about 145 F at this point which is just where She Who Must Be Obeyed likes it.

I took it inside and let it rest for a few minutes and then sliced it and served. We usually slice our steaks up rather than serve slabs.



We served the steak with smashed potatoes and coleslaw.


The Verdict

The low heat at the beginning gave a nice smoke kiss and the meat was moist and tender. I really liked this and will do it again with a more premium cut of beef.
