Brisket for dinner

This week is brisket week for family dinner night. Woke up at 5 this morning to get the ol drum fired up. Threw a little hickory on for some flavor. At 6:30 the temps finally got up to 235. Tossed in the 10 pound choice brisket with some salt and pepper on it. Sure smells good.
A few hours in and the smoke is rolling out. Should be good. Haven't done many briskets.

I love any meat slow smoked. Just threw on some bourbon beans and bacon. Brisket is getting close. Hitting 174. Still not tooth pick tender but getting there.

Sorry for the delay. Family cook nights are crazy busy. I didn't get a good money shot. I had 11 kids screaming for food. The brisket turned out amazing. I ended up using the slicer to slice it up for Sammie's. If I did it again I would let the meat cool before slicing. It made a mess of the slicer. Everyone enjoyed it. The beans lacked flavor. They were just some bushes beans in a pan with some bbq sauce. I made a quick slaw out of a cabbage from my sons garden. All in all a good cook. The brisket cooked for 11 hours. I didn't wrap it. I pulled it at 182. Very tender and juicy. The salt and pepper was spot on. I didn't measure it. Had a few slices left over but not much. I will try to do better with taking more pics.

I can't believe there was any leftovers with 11 kids!biggrin.gif It looks tasty there not hard to slice if you got a nice knife better then cleaning the slicer IMHO.

Especially when there are a bunch of kids out by a fire with axes and hatchets. They chopped down two 50 foot spruce trees with an axe and were limbing it. Cheap labor.
