HELLO SMF!  

   I just recently moved to northern Indiana and got a housewarming gift from the mother-in-law: A Smoke Hollow HC4518L Combo Grill. Having lived in an apartment my whole life, I've never had the practical space (or resources) to really consider DIY smoking. I've been interested in smoking forever and have been involved in it in some capacity throughout my professional career, working with industrial Vortron and Southern Pride smokers for both cheese and meat. I figure retrofitting a charcoal grill is as good a place as any to start a DIY project.

   I just had the grill delivered today and I've seasoned it and fired it up. 4.5 hours later it is has been holding a solid 350F. Tomorrow I'm looking to get to know its personality and temperament, then it's smoking time. Mods will inevitably come later as smoke was leaking from every possible crevice. 

   I've been inspired by posts about file cabinet smokers to try and see if I could squeeze a self-contained cold smoker into a two drawer cabinet. I haven't had a chance yet to really explore the Cold Smoke forum for tips but so far I'm exploring

an idea I had to water chill the smoke by literally using a hookah and an air pump to create negative pressure, pulling air through the whole apparatus into an otherwise sealed chamber.

   My longer term project is going to be a joint effort with one of my new neighbors who happens to have a massive empty drum just sitting on his property. I am looking to embark on my very own UDS adventure, which will hopefully result in a horizontal reverse-flow smoker with huge capacity.

   Anyway, good to be here, glad to have found SMF and I hope to learn much from the masters and maybe one day be able to help others with their smoking endeavors.

Holding at 350F for 4.5 hrs. I prefer 225F for most smokes but fine for seasoning the box.
