I have been cooking and smoking in one form or another for many years. I do it as a hobby and enjoy the "cook" and feeding friends and family even more than actually eating. However, I do enjoy eating too much! I look at cooking and smoking as more of an "art" rather than a science. I don't bake well because baking is a science. Baking is chemistry and cooking/smoking is philosophy. No hard-line definite answers in smoking, but a lot of good recommendations that have worked well for others. I live in Arkansas and have several grills and smokers that I use often. The list; a Weber Genesis natural gas grill, a Weber Kettle charcoal, a cheap vertical gas smoker, and a novice built 20x36 offset made out of 1/4" steel. The grills are used almost daily and the offset gets attention on the weekends. It is like it's owner, not too pretty, but a really good worker. I have supported my cooking habit by being a police officer for the past 23 years. I have a wonderful wife that is an awesome cook and pretty handy with the fire tending as well.
