Rookie smoker

Trying a forum for the first time hoping to receive some good advice. I just received a Brinkman smoker and grill from my Wife's parents. It is a bullet type smoker. I am going to try smoking pork shoulder for pulled Pork this weekend as my first attempt. I am using Kingsford Hickory charcoal and have some Hickory chips also. Just wondering if anyone has advice on whether or not I should actually use the chips?

Welcome from SC. It's good to have you on this great site. I would prefer chunks to chips and whatever you do don't soak them. The hickory will be pretty strong for pork. You may prefer apple or cherry. Also, I would suggest any charcoal except Kingsford. The binders and chemicals will produce a bitter smell, a heavy finish to the meat and excess ash. Try Royal Oak or any other all hardwood briqs or better still lump.

Well I ended up with a smoked shoulder rather than pulled pork. Flavor is still pretty good but not what I was trying to get. Definitely need to do some of the mods to the ECB smoker.
