For the Labor Day Holiday weekend Winn-Dixie had a 2 pack of Boston Butts on sale. So I thought I'd try my hand at making some sausages.

I used Chef Jimmy's recipe for Kielbasa, they turned out really good considering they were a first for me. Glad I made a bunch of them as they will go fast. His step by step guide was great.



Then I made some Wisconsin brats


I also made some of Disco's PWE hot dogs but had the wrong size casings. I may just use the 21 mm casings I have for some skinny wieners. They should end up about the size of Nathan's though I would rather a thicker dog. I'll post some pics of them after I finish them up. The test fry was real tasty!

Had the Brats for dinner with some homemade sauerkraut, they are always a big hit around here. Steamed in beer & onion then finished off on the grill. They topped off a great day. Also smoked a pork loin roast to make Sammy with this week.

 I made everything from ideas here on the SMF.

Welp.. I can tell you I wouldn't say no if you were to offer me some.. damn they look good (your hooked) ... I too took up Winn Dixie on their offer for butts... granddaughter got her a deer last wknd during bow season.. she brought me 20 lbs of meat to make her some summer sausage.. so what the hell... made up 25 lbs of summer sausage and 25 lbs of snack sticks... but you know me.. not one to take pictures....

Thanks guys!  I learned a lot from Keith and some others a couple years back at the S Fla Gathering. We made up a bunch of snack sticks that weekend. I'm gunna need a bigger freezer.

Cranky B, I have made the brats a couple times but never the smoked kielbasa. Since these turned out OK I'll be trying summer sausage soon.

Be careful! Once you start making your own sausages, you may not want to quit! There's always something new to try or a new flavor to add! Not to mention, you know EXACTLY what is in your sausage.
