Thawed a butt I found in the deep freeze,cut it in half one half seasoned for carnitas and the other rubbed with bad Byrons butt rub for pp. there in the WSM with a hunk of mesquite and some cherry.

MMMM Carnitas..

I get some small boneless butts ( SmithField?) from the WM neighborhood market down the street. They make some nice carnitas and because of their size, I can make them in a small crock pot for smaller batches..

Looking forward to see what you come out with..
 
Well there looking good so far,your most likely wondering if I like to keep my pork behind bars? The answer to that is no I smoked a couple burgers for lunch. It's about time to wrap the carnitas portion the pp going naked the whole way.Thumbs Up

 
Playing with dinner tonight,warmed up some carnitas style pork tossed in a pan with a touch of butter and added cheese let it all crisp up flipped and crisped then tossed it on a tortilla. Hot crispy and very tasty time to make more.:biggrin:

Fantastic!!!!! What a spread. Carnitas, omlet with PP, pulled pork, and "almost huevos ranchero". What a great menue. I could live on a menue like that for months. POINTS for sure. Gary

Thanks Gary, only issue I had is one of the yolks broke on the almost huevos ranchero was a bummer the bark on the pp butt was super tasty and everything came out tasty!
