Today's brisket, kind of a teaser...

Wasn't planning on smoking any large meat today, but the bride requested, so a 15 pound packer was made.

The bride told me last night that she wanted me to make a brisket so we could share with a couple of elderly folks on the street, and the German couple next door. So, this morning, I went and got this critter and a pork loin.


After rinsing, I slathered the packer beast with yellow mustard and then coated heavily with my homemade rub.


I put it into the homemade electric vertical set at 230 degrees. Smoke was hickory pellets in my Amazen tube.

I also made some jerky, so the MES was put into service as well...


14 hours later, the brisket was ready, so I pulled it, wrapped it in foil, and then wrapped it in 2 wool blankets. It's now resting in an igloo cooler and will be sliced tomorrow.


Sliced pics of the brisket and a beef jerky thread will come in the morning after some coffee....
 
Not my prettiest brisket, but slicing was a problem, it wanted to fall apart!



When my electric knife starts up, we have a cat that comes running at high speed into the kitchen. My wife said as soon as I fired up the knife she lept out of the bed and ran my way. She loves all things meat!


I took about 2 pounds over to our neighbor's from Germany, and made a plate for the elderly lady across the street. I didn't take a pic of the 2 pounds, but here's the plate with some homemade BBQ sauce for the lady across the street.


Now, back to jerky...
 
Nice man! Points your way. Besides, pretty is fine but tender and juicy is just more important in my book. That said, that brisky's still mighty attractive!!!

Nice brisket Cranky!  My last two briskets fell apart when slicing.  The flavor was amazing however, and very moist.

Funny about the neighbors. We're having a neighbor couple over next Saturday for dinner (hailing from NYC) and what is their request? Brisket!

SmokeyMose, you mentioned GFS in your last post:  got their email yesterday.  Brisket @$2.39/lb., with a 12 lb. average.  Good through Saturday 9/10.
On it, Groucho! Picked this up on the way home from work. It's a little bigger than I wanted, but it was the last one. By the time I trim fat and cut the flat off to save for Pastrami I should have an 8 or 9 lb point for Saturday.
