Labor Day Brisket Flat

The wife is out of town at her mom's in Cali and I have been craving brisket.


Stopped by Costco last night and picked up a nice choice ~7lb. brisket flat, not too big, not too small... just right.  :biggrin:




Mixed up a batch of this rub to try



Trimed a little fat cap, scored and made a cut to find the grain of the meat.



Yellow mustard



Rubbed up




Wrapped and in the fridge for a Saturday low and slow

Smoke time



I am trying out the expando tube I got from Todd - Expand Factor= Maximum, fits the mailbox just right!



Mesquite for this flat, I love a strong smoky flavor



I got some fat up top in Smokin Als foil baster dripulator design!

The brisket flat turned out good, a little dry but still darn good!
