The wife is out of town at her mom's in Cali and I have been craving brisket.
Stopped by Costco last night and picked up a nice choice ~7lb. brisket flat, not too big, not too small... just right.
Mixed up a batch of this rub to try
Trimed a little fat cap, scored and made a cut to find the grain of the meat.
Wrapped and in the fridge for a Saturday low and slow
