Vortex arriving on Friday

Now, what are some good "starter cooks" to do while I'm learning this things quirks? Chicken, burgers? It's coming with that Tatonka dust I've been seeing all over the SMF. I'll be using it on my Weber 22" kettle with Kingsford regular and hickory briqs.
 
I haven't used mine a lot Sat. I fired it up with coal that was left in my smoker,it held over 400* F for 4 hrs

Baked potatoes Stuffed mushrooms. I have also done some sausages on it

I will be watching. I just acquired a mint Weber stainless gas grill and am looking to sell or trade it for a Weber 26 inch kettle and I want to get the cast iron grate and the vortex

OK so small vortex and medium vortex are listed for the 22.5 kettles. Is it personal preference? What did you all go with?
I have the 18.5 so the small is the only size for mine,I got 4 hrs of 400* that I know of it was still burning my last check,you will love it

I did some brats and chicken wings. You should just go for a nice reverse sear steak,that's next for me!
 
It came in the mail a day early!! Woo hoo!

My son had football practice so I didn't get to play with it last night but today is gonna be a different story. Not sure what I'm going to do first, steaks sound good, but it will be something I can do after I get back from the evening dove hunt..

Congrats on the new Q toy man, I really like mine ! Lookin forward to seeing your future cooks with it ! So, what did ya decide on for the inaugural smoke ?

All I can say is this thing is COOL!

I dry brined a few ribeye and dusted a flat of wings with the Tatonka before we set out for some dove hunting.

I had my wife light the chimney when we were on the way home so I came home to some hot and ready coals. I set up the Vtex and went to work.









The absolute best wings I have ever had. The flavor was great and the skin was nice and crispy! The steaks were a perfect med-rare (although I like them just a bit under med) and the stuffed shrooms and asparagus complimented the beef well. Tossed in a little surf with the turf and paired that with some hollandaise sauce. What a gut full.. I just hope my gout doesn't flare in the next few days..

I tell you, I thought I had mastered the kettle. This Vortex makes it even more versatile than ever!

This thing really gives you a ton more space for indirect cooking and I had the temps all through the 300-400 range by adjusting the lower damper. I did the whole smoke over 1 Weber chimney full of regular Kingsford briqs.

I would recommend it it you do a lot of charcoal grilling as I do..
