I am Going to be smoking my first brisket flat on Saturday.  When I was looking at Brisket Flats at the store they look too big to fit on a grate in my Dynaglo Offset Charcoal Smoker. Can a brisket flat be compressed somewhat to fit, or does anyone else have any suggestions on how they dealt with this problem?

The easiest way is to just cut it in half.

It will also cook faster that way.

Or some guys lay a soda can on the grate & drape the brisket over the can.

This will shorten it up also.

I have seen where some people say cut it in half, and other people say never cut it in half.  Is this one of those things that is just a personal preference?
