3lb flat

Doing a 3lb flat on my electric tomorrow. Any advice other than do it on charcoal? Lol

Go low and slow...200°F. When the IT gets to 195, probe test for tenderness. The probe should slide in, no resistance. This may be at 195, might not be until 205+...But...Go by tenderness not time or temp...JJ

I always smoke flats in a pan sitting in their own juices. Sometimes I add some beef broth.


Keeps them moist. IMHO.
